Ole G. Mouritsen

Invited by Professor. Paulina Mata, coordinator of the Master Degree in Gastronomic Sciences at FCT-NOVA, and member of the ALGA4FOOD project, Professor Ole G. Mourisen from the University of Copenhagen visited the Department of Chemistry on June 26, 2019. On that occasion he presented a communication called 'Phycogastronomy' (the term phyco- comes from the Greek φῦκος, phykos, meaning «seaweed»). Professor Mouritsen also had a meeting with all members of the ALGA4FOOD project team where the project was presented to him and the work in progress discussed.

Professor Ole G. Mouritsen is a recognized author in the field of Food Science, especially in Gastrophysics and Food Innovation. He is also president of the Taste for Life Center. He has author of several books dedicated to the seaweed theme: «Sushi: Food for the Eye, Body and Soul» (2009), «Seaweeds: Edible, Available, and Sustainable» (2013) and «Umami: Unlocking the Secrets of the Fifth Taste» (2015).
