A line of plant-based cheese alternative products has also been developed in the scope of ALGA4Food, namely fermented products based on cashew nuts, enriched with seaweeds. Six products were developed (3 supplemented with the seaweeds Chondrus crispus, Palmaria palmata and Porphyra spp. and 3 other products coated with the same seaweeds). The cheese alternatives with Porphyra spp. were the most accepted by the focus group relatively to color, texture, flavor and overall impression. In this case, the two products had very different profiles but were equally well accepted. When tasters were asked if they would buy these products, the answer was unanimous - Yes.
This products, which were named Quei-Ju, were developed with the aim of occupying a place in a fast-growing market of plant-based products.
