OH-C-N (OCEAN)

The International Year of the Periodic Table of Chemical Elements is commemorated in 2019 to mark its 150th anniversary. On April 16, took place at Pavilhão do Conhecimento – Centro Ciência Viva, the dinner of the Honor Commission in Portugal. On this occasion, members of the ALGA4FOOD project and students of the Master Degree in Gastronomic Sciences of FCT NOVA, prepared the final dessert inspired by a set of elements from the Periodic Table and by the seabed. This was called OH-C-N (OCEAN), and macroalgae (Ulva spp.) was combined with tropical flavors (e.g. coconut, mango, passion fruit and ginger) in a context where multisensory perception was explored. This occasion was an opportunity to promote the ALGA4FOOD Project and demonstrate the potential of algae to be used in food.
