3rd CiiEM International Congress


Showcooking «Phycogastronomy»

During the 3rd CiiEM International, at the Cooperativa de Ensino Egas Moniz, in Caparica, the Alga4Food project was present. In addition to the poster, with the title «Are Seaweeds the Food of the Future? Challenges for its Conservation and Introduction in the Portuguese Diet» (see image), a showcooking demonstration dedicated to ficogastronomy was made. The demonstration was divided in three moments; coffee break i, lunch break and coffee break ii. In the first momemt it was served a «tea» of seaweed. In the second, a caldo-verde of wakame (Undaria pinnatifida) and seaweed tartar, and, in the third time, ice cream of sea lettuce (Ulva sp.). In the event were served a total of about 400 portions divided by the three elements.
